In our farm we produce organic cold pressed extra virgin olive oil. we are members of the Wine Route Costa degli Etruschi, that connects the area of Bolgheri with that of Val di Cornia for the affinity of agricultural conditions in our Farm our olive oil is made by only pressing olives without any chemical to fight against parasites because we only use biological techniques that attract the male of the flea into pheromone traps.
'Cold-pressed', means that olives are picked and crushed without the use of heat or unnatural processes
Regulation 1019 of 2002 determines the use of the term "Cold Pressed" in the EU. During Malaxation and Extraction the olive paste must be kept under 27ºC (80ºF).
Only olive oil produced by organic farming is admitted to the seal of organic (“biologico”) olive oil.:
-Olive oil is one of the most commonly used ingredients in all forms of meal preparation
- and so if you want to truly eat organically you'll want to be cooking with organic olive oil.
Organic olive oil is created purely from organically grown olives, and has a richness in colour and taste that is hard to beat.
Reg.CEE 2092/91 e 2078/92

We produce live oil with typical fruity taste, with scents of flowers and herbs, back taste of nougat, coloured strongly of chlorophyll green right after pressing. Picking is made rather early accordino to season. Average between the end of october and the first half of November
WINE
We are non producing members of THE ROAD OF WINE COSTA DEGLI ETRUSCHI, that offers wine routes for the following DOC:
DOC BOLGHERI
DOC MONTESCUDAIO
DOC VAL DI CORNIA
DOC ELBA
Suvereto is a land of wine. The DOC Val di Cornia was recognised officially in 1989, when tradition was combined with modern wine-making. ln 2000, the sub category of "Suvereto" was recognised to a great red wine. The introduction was made by the work of oenologists on Cabernet, Merlot, Sirah and other vines, with the typical Sangiovese.,
The wine shops and tasting rooms in the old roads of Suvereto and the many fairs dedicated to wine and food complete the picture that shows both the ancient and the new.
Another important wine location of the area is Bolgheri.
Bolgheri is a small village, lined by a splendid avenue of cypresses, as described by the famous Italian poet Carducci.
This upcoming wine region became known through the famous Sassicaia wine - a blend of Cabernets - and it is now the home of some of Tuscany's most prestigious Super Tuscans. This coastal wine region is now referred to as Bolgheri and even though the grapes that grow here are mostly French varietals (Cabernet Sauvignon and Franc, Merlot, Syrah, Petit Verdot) they have been recognized by the State with the denominations Bolgheri Doc and Sassicaia Doc.
